Here’s a bowl of tapioca pudding made with coconut milk with peach chunks


This photo of a tapioca dish comes from yomi955 via Flickr. Tapioca is a starch characterized by it’s lack of flavor, odor and color. It is extracted from the dried root of the Manihot esculenta plant species which is said to  be native to South America though cultivated worldwide. You might recognize the plant by one of the following names: cassava, bitter-cassava, manioc, “mandioca”, “aipim”, “macaxeira”, “manioca”, “boba”, “yuca” or “kappa”. It somewhat resembles a yam.

Although it is the most commonly known tapioca dish in Europe and America, tapioca pudding is not the only dish that can be made with tapioca. Tapioca is used to thicken a variety of foods and can be found in dishes that include fish and other seafood, chicken, pasta and other non-dessert meals.
